Ronda’s Super Simple Sourdough:

Make that dough!

½ Cup of sourdough bread starter
1 ½ Cups of unchlorinated water
1 Teaspoon of salt
1 Tablespoon of oil
2 Cups of bread flour
1 ¾ Cups of Whole wheat flour
Cover with foil or plastic wrap and proof for 15 minutes
Pull and fold til dough begins to smooth
Cover again and proof for 30 minutes
Pull and fold again
Cover and proof for 12 – 16 hours (depending on taste for sourness.
Longer = more sour)

Next day pull out dough and flip and coil fold and let sit in a covered bowl for an hour and 15 minutes.

While you wait for dough to proof again, preheat the oven to 500 degrees Fahrenheit. Preheat with an oven safe pot and lid inside the oven for 1 hour.

Once your dough is ready, pull your pot out of the oven and sprinkle a little flour inside so the dough does not stick to the pot. Next place the dough inside the pot. Before placing the pot in the oven make sure to score the dough so that air can escape. Finally cover the pot with the lid and place the pot with the dough inside back in the oven for 20 minutes.

After 20 minutes you will take the lid off of the pot and let the dough continue to cook for another 15 minutes to brown the outside of the bread.

Your bread is finished when it reaches an internal temperature of 200 degrees Fahrenheit!
