hi welcome back to the unready TestKitchen today I’m going to make someketo sandwich bread and I’ll be using AAMoretti’s almond flour our xanthan gumand magic ingredient is the baked breadextract one of the problems with beingon the keto diet is the elimination ofcarbs and for those of us that lovebread it’s a little difficult so withthis recipe you can have your bread andyour morning toast I started out byusing all almond flour but I found thatthe crumb was very moist and I didn’treally like that texture so I took out aquarter cup of the almond flour and Ireplaced it with a quarter cup ofcoconut flour which is high in MCTS andthat’s good for your digestion and itgives a lot of fuel for your body sothis made a much nicer look so let’s getstarted so I’m going to start with theeggs I’m going to whip up these eggsall right so the egg yolks have whippedto a very nice full volume and I’m goingto drizzle in some butter I’ve meltedthis butter but it’s had a chance tocool a little bit so you don’t want toput in really hot butter into your eggyolks so I’m gonna turn this on and I’lljust drizzle this in slowlyokay so these are done I’m gonna switchout my bowl now this took about three tofour minutes so you have to be patientwhipping these yolks to their fullvolume is really important I’ve alsomade sure that my eggs were roomtemperature before I started so that’simportant because you want to get themaximum volume from your eggs and let’sswitch this out you want to wipeeverything down with vinegar because youwant to make sure that the bowl and thewhisk are very clean they can’t have anyresidue of soap or any kind of oilotherwise your whites won’t whip up andthe other reason that you have whitesroom-temperatureis so that they will whip up and you’llhave maximum volume I have a little bitof cream of tartar gonna add that tooalright so we are ready to go againthese will whip faster than the yolksbut it will take a little bit of timeand I’m going to whip them a lot so I’llexplain it when they’re doneall right so these are done this is howmuch I want them with I want them tocling to this whisk so they’re very verystiff it’s important to wit themseparately so that you get full volumeif you want your bread to rise alrightso I’m going to measure out our almondflour and our almond flour is pre siftedso we’re gonna use 2 and 1/4 cups allright I’ll set this aside and then we’regoing to use some xanthan gum thissantim gum will give your bread a nicetexture so I’m going to use 1/2 ofteaspoon all right so now we’ve got ourcoconut flour and some swerves this ismy favorite sweet new keto sweeteningthat doesn’t leave any kind of anaftertaste so I’ve got 2 tablespoons ofswerve a little bit of salt and 1 and1/2 teaspoons of baking powderso we can mix these together alright sonow I’m going to measure in our bakedbread extract our magic ingredient andI’m going to use 1 teaspoon I’m going toput it into the almond milk our bakedbread extract is amazing and it makesall the difference when you’re making aketo bread because it gives you theflavor and the aroma of your baked breadand the taste is wonderful trust mealright so now I’m going to fold in theOaks adding the yolks and the egg whitesyou want to fold them in by hand becauseyou do not want to lose any of the airthat you’ve whipped into these alrightnow I’m adding the almond milk which hasour baked bread extract so just add thata little bit at a timefold it in then we’re going to add theegg whites very slowly fold those in aswelljust do this a little at a time and justgo slowly fold this inso as I’m pulling in these egg whitesit’s starting to get a little differentconsistency more like a batterit’s amazing how much these whipped upright okay I think we are ready to putthis into the loaf pan I’ve lined a loafpan with some parchment that I didn’tspray the loaf pan no need to do thatand I’m going to put this in here nowokay alright that looks nice and smoothso I’m gonna put this in a 350 oven andit’s going to bake for 40 to 45 minutesyou definitely want to let your breadcool before you slice it give it a goodhalf an hour all right so this hascooled and it is ready to be sliced I’mgonna get rid of this paper you can seehow nice the local is so you can seethat the crumb is very nice very muchlike regular bread and that’s importantthanks so much for watching I hope youenjoyed the video to subscribe to ourchannel and hit the notification bellyou don’t want to miss out on any of ourdiscounts on recipes and our giveawaysyou can reach out to us on social mediaInstagram Facebook and Twitter at Emoryyou
