ah was having new fan welcome welcomewelcome to the bread baking adventurewith the Unni Pro oven man I’m so gladthat you’re trying to make some breadyou know I’m saying when you’re outsidewith the fam cooking pizzas and you wantto get a get a couple loaves and realquick I’m gonna show you how to do itI’m gonna show you how to really do itnot like the Laurette video and I wasjust messing around snippet sorta youknow throwing the flour and this andthatbut I wanted to give y’all y’all keepasking me you know I’m saying y’all askyo like how you really big bread inthere not how you you know time that wasyou know it was fun it was funny but howdo you really get some good bread out ofthat when you Pro so I’m gonna I’m gonnatake this time here in this video tokind of show y’all what’s really goodwith it even from the shaping of thedough like how big should you make yourlows you already know on the blogthere’s a this country sourdough recipeyou know but I’ve also with Unni I madea yeasted bread recipe that’s on theirwebsite so you can check those out soyeah so what do I have out here I’ve gotall the tools that I need obviously gotthe Unni Pro when I use the pro I liketo use the this door attachment formaking bread it’s got the thisthermometer is very helpful becausewe’re kind of gonna use the residualheat that’s in the oven we’re gonnawe’re gonna use a wood fire and we’regonna get the temperature up so that thestones get really hot but we’re gonnakind of kill the flames off and you knowusing this temperature we’ll see whatkind of heat we still got in there sothat’s why I like to use this door[Music]the type of wood so the type of wood I’musing it’s a dry killing wood very verydry good wood and I’ve got it cut intothese kind of size pieces instead of Itypically I typically want to make pizzaI’ll take a longer chunk of wood andjust shove it back there because I liketo keep that flame hot for the pizza Iput this in to make bread the flame willtake longer to die down so if I usesmaller pieces I can get the heat up andthen and then kill the flames off kindof quicker because they’ll burn outfaster I’ve got the Unni gloves whichare super helpful in terms of notburning yourself because that’s the nameof the game you know I’ve got the brandnew turning peel which I just got nottoo long ago and this is awesome for apiece it’s also good for bread becauseyou’re gonna you know want to rotateyour bread while it’s in the ovenyou know what I’m saying so it’sexcellent you won’t have to pull it outand use your hand I’m at least you knownot that good with it yet though for thebread you know I’ll show you how I shapethe the loaves then they’ll proof andthen we’ll bake some bread yorams andI’ve got some sourdough here I’ve letthis ferment for about five hours andthen I’m going to shape it and prove foranother two to three hours I might evenlet them proof outside because it’s like79 degrees right now so yeah so youcould also do this the day beforeobviously the normal typical sourdoughprocess where you both your dough shapethem put them in the fridge overnightand that way whenever your oven is readyto go you can simply grab them from thefridge and and pop them in so we’ll dumpout the doughall rightthose looking absolutely lovely[Music]beautiful grab a little more flour it’svery nice and bouncy though here todayso I will use my little scale here andwe’ll go 400 grams so to shapeI’m gonna use my preferred method hereof just kind of you know a little bit offlour here on the surface on the worksurface head it down and then tuck intoitself alright get it nice and tightalright let me place that guy rightthere as always make sure you have funwith it as well you know I’m saying getyou the put your little vibe into it putyour you know I’m saying put your boomboom whatever you whatever it is youneed to do those it’s a liven up yourmood would you get your little shape anddance on whatever you need to do so yeahlook that’s my very simple shape desiredshape for bread in the oven at thispoint if you’re doing an overnightfermentation you shape don’t put them inthe fridge put that on a cutting boardtake a ball space you fridge let peopleget mad at you because you got a cuttingboard a throw in the fridge some gravyand yeah I might even like I said Imight just cover these guys leave themright here come check on them in our youknow I’m saying and hope hope no iguanasget to them so yeah Brett’s proofing andthe oven is here gonna show you realquickhow I how I do this I’ll take three ofthese guys alright I’ll put one on theon the tip there and I’ll put one morelike that on the side then I’m gonna putanother one right here alright and thenwhat I want to put in in the bottom iscardboard I’m gonna put some cardboardright there then I’m gonna light thatcardboard on fire all right as thecardboard is burning up I will add someof the bark in the wood and I will addsome of these smaller I’ll add some ofthe smaller pieces of wood there[Music]even even that guy on top you mightnotice your flame on the cardboard kindof goes in and out so we’ll add as manyof this debris as we can into the bottomyeah I’ve got some cardboard paperwhatever if you need to use fire starteror coal or whatever your preferredmethod is as you can see for me it’svery simple I just I just do a littlebit of cardboard a little bit of somelittle sticks of wood some some whateverand then I kind of surround it withbigger pieces of wood then I then I kindof layer on top of that another bigpiece so that when it catches in themiddle you know the other the big guystarts to burn that’s how I like to getit lit and we’ll monitor progress to seehow big the flames gonna get I willtypically light the fire when my proofis about now we’re in or something likethat maybe an hour and a half in so thatI’m not you know under the gun with DOEthat’s ready to go but my fires notquite where I wanted so yeah it’s veryimportant to kind of time it so thatyou’re not outside with like doughthat’s ready to go but your ovens aren’tready and then you know it’s all stickyand you know you get you get stuck tothe peel it over proves that explodesyour whole day is ruinedspeaking from experience and the ovenI’m gonna keep this this guy open so thelittle levers facing down like I saidthe the door I’m gonna keep this openand I’m gonna keep the back closed andI’ll look on the inside to see how thebuyers do it all right so once I see thefire gets to about this level I’m goingto close the door and let it heat up letit continue to heat up well at thispoint if you want to make some pizza andstuff like that before you bake thebread you could definitely fire off acouple pies but for now I’m just gonnashow you how to bake the bread you knowain’t no piece I have it in todayyou dig all right guys check it out sothe dough we just had the fire it’s beenlit it’s about 30 minutes later thedough is just completing a full to ourproof and it’s really nice so this is mysourdough recipe and it’s just at anambient proof you can see here the ovenis exactly where I want it to be whichis right at 250 Celsius and I’ll showyou what that looks like insideyou basically have no open flame so howdo we load the French I’ll put my unipeel here I’ve got two pieces ofparchment all right so we’re gonna takeone loaf at a time we’ll just take oneloaf put that guy right theretake the other loaf boom and we’re gonnaload these I don’t want to go all theway into the back of the oven I’m gonnakind of load them as close to the frontas possiblewhat we’re gonna do is we’re gonna putthe cap on here and we’re going to closethis guy up if you’re baking bread inthis mini Pro oven you really should belooking for delicious crusty rusticbread alright guys so I’m about 10minutes into the bake I’m going toremove the parchment paper so that I canrotate the bread with ease so we’re inthe middle of the bake we’re almost doneI lost I lost a little bit of heat soI’m gonna show you what I did I justtook a tiny sliver of wood and justthrew it in and it just caught fireitself I didn’t I didn’t put anything inthat was too big because I don’t reallywant the flame to overreach and touchthe dough but I did want to get the heatback up here at the 15 minute mark I’mgonna use the Uni gloves pull the loavesout see what they’re looking likealright so not bad very crunchyyou can already hear the crack I want alittle bit more color though alright seethe bottom you can kind of test it heresee if it’s awe’re almost there I mean we might evenbe there you can hear that hollow tapnot to not burn you know a little darkthere but I want a little more color onthe top so I’m gonna let him ride for alittle for a little longer I check itout I am saying it’s time to get thebread out I’m gonna go with the gloves[Music]man just like music to my earsyou hear that Wow crunchy[Music]beautiful Wow look at thatthat’s bread baby that’s bread if youtell me that in 20
