well happy Monday you guys and today isa snow day here in northern LowerMichigan my neighbor Billy who’s thesweetest man ever is out there right nowplowing my driveway so as a thank you Iwant to send him over a cinnamon breadso it’s gonna be kind of like a cinnamonroll but it’s gonna be a bread and we’regonna do something special we’re gonnakind of put it inside out and then we’regonna twist it we’re gonna make itpretty so I figured I turn on the cameraand take you along and you guys can seehow a great guy so let’s make a loaf ofbread we are gonna start with one and ahalf cups of warm water two teaspoons ofinstant yeast two tablespoons sugar thisbreadslightly site because I want the dough alittle sweet so I’m gonna add anequivalent if I had to guess about atablespoon of fresh local honey from abeekeeper that is a friend of my son’sokay and then to this we are gonna beadding 4 cups waiting out your flourlike I am we’re gonna be adding 548grams of flour which I’m gonna put in mysifter tool I’ll leave a link up aboveto that this tool this scale tool forthose of you who are interested allright so now I’m going to turn on mymixerand we’re gonna start sifting in ourflour[Applause][Music]now to this I’m also going to be addingtwo tablespoons of softened butter twotablespoons of milk powder one teaspoonof cinnamon[Applause]the spoon[Music][Applause]I’m gonna go ahead and I’m gonna detachmy scale scepter and then I’m gonna goahead and just let this now cometogether and some I’ll bring you backwhen we get it into a ball off of themixer all right and then make surestraight right here take off my ringsand my watch my Fitbit and I just wantto get this into a nice pretty doughball[Music]let’s see right there beautiful I meanit’s beautiful okay so now what I’mgonna do is with my bowl you’re justgonna take a little bit of olive oil andjust drizzle a little bit inside andwe’re gonna take our dough ball we’regonna go ahead and put it upside downwe’re gonna spin it in oil we’re gonnaflip it over so that it’s nice andpretty and then I’m gonna take I’m gonnatake a bread towel and I just like todampen it that’s when my camera dies sothere’s our dough ball okay and then I’mgonna place this in my oven on the I’mthe proof setting I have a proof settingon my oven it’s one of the reasons why Iwanted this particular oven but you goahead and just set this some more warm Isometimes well I used to set it under mylights under my cabinet lighting you canset it on top of your stove you can putit in if you have a proof box or nextcaliber they also have a bread proofingoption on those that and those tools aswell so you just want to set thissomewhere warm especially right now oryou know when it’s cold and drafty herein Michigan we just got about six orseven inches of snow so it’s very coldoutside so just set it somewhere warmand we are gonna leave this alone for anhour we’ll come back and we will shapeit and we will add the cinnamon to itand and then it’ll be ready for itssecond rise so I will see you guys backin one second but an hour might be niceso it’s been an hour go ahead and takethat top down with nice clean handswe’re going to go ahead and deflate nowthis only makes one loaf that’s all Ineed because this is goingstore to my neighbor we’re going tobring that out go ahead and roll thisout okay so once you have your breadrolled out we’re just gonna kind of makeit more of a of a perfect rectanglesquare whatever shape yours is close tobeing just like so and then we are gonnatake powdered sugarokay this is what we’re gonna do we’regonna go ahead and we are going to witha sifter we are going to lay down a nicehearty later layer of powdered sugarit’s gonna make a bit of a mess makesure you have really clean towners Iknow I hate having to say that but I’llget ridiculous snarky comments in thecomment section if I don’tokay powdered sugar so really reallycool technique and it works really welland it ends up being really pretty okayI do it so that I don’t see the thedough anymore and then I know it’s anice layer okay so once you do thatwe’re then gonna go ahead and we’regonna sprinkle a layer of silica aheadand with a spray bottle with just waterin it you can buy a spray bottle even atthe dollar store we’re gonna go aheadand just lightly mist that okay and thenwe’re gonna roll it right so we’re gonnastart hereOh a nice tight roll[Music]actually I want to roll it this way I’mgonna roll it this way instead becausethis will fit my pan a little bit betterso I’m gonna roll it roll it roll it andthen of course when you get to the edgehopefully you guys can see this can youbring it up as even as possible andyou’re just going to pinch the seam okayall right and then we’re gonna go aheadand poke poke the end in bring it up andseal it and we’re gonna do the samething with this sign I’m gonna poke itin bring it up okay I’m gonna get my panout and I’m gonna use my pullman pan butI’m not going to put the lid on it soI’m just gonna go ahead and kind of sealthat bottom okay and then what I’m gonnadothis is what’s cool hey you got it niceand sealed if you guys can see thathopefully see my bench tonighthey and right down the center I’m gonnacut thisright down the center okay and thenyou’re gonna be able to see those layerson the inside okay what I’m going to dois on the edge I’m just gonna pinch thatedge together okay and then the theunder side one we’re gonna lift up andwe’re going to spin it okay this is justa twist okay and we’re gonna do againthe lower one I’m gonna twist it okayagain twist twist and then when you getat the end here okay go ahead and justpinch that together just like that allrightso there is our cinnamon twist all rightnow I’m gonna do it in a Pullman panbecause you know I’m giving this as agift so I want a nice big party loaf I’mgonna go ahead and tuck that in try tokeep the shape as much as possible makeit even okay I’m gonna pick you up andshow you what that looks inside the pannow I’m gonna preheat my oven to 350degrees I’m gonna go ahead and coverthis again I’m gonna let it rest andrise another 30 minutes 30 to 40 minuteson my on my stovetop I’m just gonna putit right here on my stove top and letthis rise is my oven preheats to 350degrees and then we’re gonna come backand we’re gonna put it in the oven soI’ll be back when this rises and I’llshow you what it look atry to set it up here so you can seethis so there we have it and what I didis I went ahead and I beat one egg witha little bit of water and I’m gonna givethis an egg wash because it’ll just bereally pretty and it’ll give it a reallynice not only golden brown color but itreally makes the glazed look on it[Music]and then this is up to you like youcould put a icing on this after it’sdone baking you can do like a crumble ontop with some brown sugar I’m gonna keepit simple because this is again this isa gift for my neighbor so I don’t wantto add glaze in case that’s too much forthemand I might keep this nice and simplefor them to just slice up and toast inthe morning so what I’m going to do isI’m going to be adding I am adding thisit is a sweet seasoning blend it has seasalt orange cinnamon and ginger in ityou can also use just a cinnamon sugarwould be really nice on top of this aswell I’m gonna use just a sprinkling ofthisit has a really nice flavor on itand it gives it a really nice likecrunch on the top so I’m just gonnasprinkle a little bit of that on the topI do have some sanding sugar mixed witha little bit of cinnamon so I’m gonnajust sprinkle a little bit of that ontop as well just for that extra crunchwill do it so I’m going to show you whatthat looks like now I’m gonna put it ina 350 degree oven for about 3035 minutesuntil it’s golden brown and when I bringit out of the oven I will show you guyswhat it looked like Oh all right so justpulled it out of the oven and we aregonna flip this out and then I’m gonnalet it cool on the rackcool crackjust like that and let me turn on thekitchen lights you guys can get a betterlook at what this looks likeall right there you have itit’s just that technique it’s just sucha pretty nested us bread there’s all thecinnamon get that focused for youthat side it’s just really really prettyso again if you want to add a glaze tothis you can definitely add a glaze I’mnot going to add one just because like Isaid it’s it’s a gift and it’ll be a loteasier to bag this up this way withoutthe glaze plus I don’t don’t feel likethat or not but this is so goodsliced up toasted in the toaster ovenand with a little pad of butter in themorning with your coffee oh my goodnessit’s also really good if you add raisinsto this you can add cranberries to thisyou could add chocolate chips if youwanted but I’ve never done that I’vedone the raisins and I’ve done the cranthe cranberries the craisins I thinkthey’re called and those are fantasticin this but honest-to-goodness just likethis by itself with the cinnamon is allyou need so good and so pretty right soit’s just a different technique that’sall it is just splitting that down thecenter like that and exposing theribbons is what makes it so pretty sounique so anyway I hope you guys likethis video I hope you give it a try ifyou have already I mean you know Ididn’t invent this you guys so if youhave made this already comment downbelow if you plan on making or making itor if you go ahead and make it fromwatching this come back and let me knowwhat you think and um yeahas always guys I’ll be uh I’ll be seeingyou later alright guys you have a goodweek and I’ll be seeing you soon alrightbye guys
