Baking Soda Bread (Sort of)

It was a rainy day today so I decided to bake some bread. It ended up being more of a soda bread thing more than anything else. If you want the recipe, scroll down!
We went for a short walk around Spittalfield with the dog.

Recipe

Ingredients: 1kg Allinson’s country grain flour, 2-4 tsp Allinson’s dried yeast (depends how much you want the bread to rise), 2tsp sugar, 2tsp salt, 2tsp bicarbonate of soda, 600ml milk, 50g of butter

Method:
1. Put the flour, yeast and butter into a mixing bowl
2. Put the milk, sugar and salt into a pot and heat until warm. Make sure to stir thoroughly to dissolve the salt and sugar. Make sure the milk doesn’t get too hot otherwise it will kill the yeast.
3. Pour the milk mixture onto the dry mixture and combine the ingredients
4. Once combined, knead the dough on a floured surface for around 5-10 mins
5. Shape the dough into a ball and place it into an oiled bowl. Cover with clingfilm and leave in a warm place to rise for 1 hour
6. Prepare two loaf tins. Wipe oil around the insides of the tins and dust with flour
7. Once the dough has risen, put the dough on a floured surface and knock back. Divide the dough into two equal halves. Shape the halves and put them in the tins. Put the tins in a warm place to rise for another hour.
8. Place a tray of water in the oven and pre-heat to 200c (I usually do this once the loaves have risen for 30 mins)
9. Once loaves have risen place them in the oven to bake for 25-30 mins
10. Once baked, remove the loaves from the tins and place them on wire racks to cool
