90 Second Keto Bread and Keto Blueberry Jam

90 Second Keto Bread with Almond Flour or Coconut Flour

This 90 second bread is made in the microwave and you can use almond flour or coconut flour. I also provide oven instructions. Use this to make a grilled cheese or low carb sandwich!

90 Second Keto Bread
INGREDIENTS
3 tbsp almond flour (or 1 1/3 tbsp coconut flour)
1 tbsp Avocado Oil
1/2 tsp baking powder
1 large egg (See notes on how to make this less “eggy”)
tiny pinch of salt

INSTRUCTIONS
Add all ingredients to a 4 in. x 4 in. microwave safe bowl, tap on the counter a few times to remove air bubbles, and microwave for 90 seconds. You can also bake in a oven safe container for 10 minutes at 375F

JENNIFER’S TIPS
For 1 serving using almond flour: 315 calories / 29g fat / 4.7g carbs / 2g fiber / 11g protein
For 1 serving using coconut flour: 235 calories / 20g fat / 5.7 carbs / 3g fiber / 8g protein
NEW NUT FREE VERSION: if you are intolerant to almond flour you can use sunflower seed flour as a 1 for 1 swap with the almond flour.
To make this less eggy tasting, use just an egg white as the egg yolk is where the eggy taste comes from.
Tap the container on the counter a few times to remove any air bubbles before you cook it
You could really use any nut flour that you want if you are allergic to almonds or coconut. For alternative nut flours like pecan four, you would use 3 tbsp. You use half the amount for coconut flour because it’s not really a nut and it is very absorbent!
I found that a 4 in. x 4 in. microwave safe container made the perfect size piece of low carb bread that could be cut in half and stuffed with all the things
You could also use a round container that is 4 inches in diameter for a keto mug bread
If you would rather bake this in the oven, you can use an oven safe container and bake at 375 for 10 minutes
Toasting this low carb bread makes it have a much better texture. you could also use a skillet to toast it in some butter. Yum!

Keto Blueberry Jam
INGREDIENTS
1/ cup Blueberries
1/4 Cup water
1/4 Cup Granular Sweetener
1 Tablespoon lemon juice
1 teaspoon Xanthan gum

INSTRUCTIONS

In medium sauce pan over medium-high heat, add your blueberries, water, sweetener, lemon juice and xanthan gum.
Bring to a boil.
Reduce heat to medium and cook for 5 more minutes. Stirring frequently.
Remove from heat and set aside to thicken.
Let cool in the pan for about 15 minutes, then pour into jelly jars with lids.
Should make 1 1/3 cups of jam.
This will keep for 2-3 weeks in the refrigerator

– Today on Low Carb with Jennifer,I’m going to show you how I make my recipefor 90 second microwave breadand an easy blueberry keto jam.Hey guys, I’m Jennifer
Banz and I help home cooksmake keto meals that are
family-friendly and easy to make.So I’m going to start off
and make our blueberry jam.And this is definitely keto-friendly,only about one or two
carbs per two tablespoonsfor this jam.So we’re going to start off with
some whole fresh blueberries,you can also use frozen blueberries.That was a half a cup.And I’ve got some water,and lemon juice.You guys are not going to
believe how easy this is.I turn on my heat.Some sweetener.And our secret ingredient for thickeningto make it jam-like is xanthan gum.So we’re going to cook this down
for about five minutes or so.We’re going to let the sweetener
and the xanthan gum dissolve.The blueberries are going to
start to pop and release someof the juice and it’s going
to start to thicken up.We’re going to want to bring it to a boil.And then let it simmer
for about five minutes.And just like that we’ve
got our blueberry jam.It looks amazing.We’re going to set it
aside and let it setupfor a little bit longer.Just going to set it right
here and we’re going to makeour 90 second bread.Okay, we’ve got everything that we needfor our 90 second bread.And I want this to be
round, you could do square,it doesn’t matter.I’ve got a round ramekin here.And I’m going to add some butter.And I’m just going to swirl
that around on the insideso it can coat the inside of the ramekin.And now we can add in our dry ingredients.We’ve got almond flour, baking powder.I’m going to stir that up,
and also a pinch of saltand some beaten egg.And if you wanted this
to be less eggy tasting,you could use just an egg white.Just one egg white is all you need.I did the whole egg.So, just going to mix this up.That’s all there is to
that so we can put thatin the microwave for 90 seconds.Okay, our 90 second bread is
already out of the microwave.So I’m going to cut it in
half with a sharp knife.And you can toast this if you want.You can toast it in the skilletor you can toast it in a toaster.Okay, let’s butter this bread.And then we can put our jelly on top.Can’t wait to show you
how the jelly looks.A spoonful of the jam,
