❤️🍕 Pizza and Pizza-bread. Very quick and easy recipe. In baking tray in domestic electric oven.

Ingredients for 5 pizzas (11 inch pizza tray)

All-purpose Flour (or any other as preferred): 600g (5 cups minus 3 tbsp)
Water (may vary depending on type of flour and yeast): 460g (2 cups)
Sourdough starter (50% hydration): 260g (1 cup)
or fresh brewer’s yeast: 9g (3 tsp)
o active dehydrated yeast: 4g (1 1/2 tsp)
or instant dehydrated yeast: 3g (1 tsp)
Sugar: 10g (2 1/2 tsp)
Salt: 17g (3 tsp)
Extra virgin olive oil: 20g (1 1/2 tbsp)

Preparing and Leavening time: about 6 hours

Procedure

1. Dissolve the yeast and sugar in the water
2. Add the sifted flour
3. Mix for about 5 minutes (the dough will be sticky)
4. Dissolve the salt in the oil and add it to the mixture
5. Mix with folds for about 1 minute
6. Cover the bowl with a tea towel and let it rest for 1 hour
7. Place the dough on the work surface, make some folds and portion in 5 loaves
8. Let stand at room temperature in a sealed container until doubled in volume (about 5 hours)
9. Prepare the sauce: hand-press the peeled tomatoes with basil and salt
10. To fill the sides: create a creamy mixture using for example spreadable cheese or ricotta or gorgonzola (I use in the video sun dried tomatoes, but I’ld suggest gorgonzola and walnuts)
11. Oil the tray with extra virgin olive oil
12. Roll the dough from the centre to the edge
13. Place the pizza in the tray
14. Place the cream on the edge and close the sides
15. Garnish with sauce, large pieces of mozzarella, grated Parmesan cheese and a drizzle of extra virgin olive oil
16. Bake in static oven at 250°C (480°F) for about 15 minutes
17. Beautiful and tasty 🙂 Let’s move on to the Pizza-bread 😉
18. Oil the tray with extra virgin olive oil
19. Place the loaf on the tray and cut it slightly on the surface
20. Cover and bake in a static oven at 250°C (480°F) for about 10 minutes
21. Add sauce, mozzarella, grated Parmesan and a drizzle of extra virgin olive oil
22. Bake in static oven at 250°C (480°F) in the upper part for about 5 minutes
